Ingredients

    3/4 cup Daisy Brand Cottage Cheese
    8 ounce can chunk pineapple in juice, drained and diced
    1/4 cup finely chopped red bell pepper
    1 tablespoon chopped fresh cilantro
    1 teaspoon salt-free southwestern chipotle seasoning
    24 rye crisp whole grain crackers

Directions

In a medium bowl, stir together the cottage cheese, drained pineapple, red bell pepper, cilantro and seasoning. Spread about 1 tablespoon cheese mixture on each cracker; serve immediately. The cheese spread can be covered and refrigerated up to 2 days before serving; stir before serving.

Serving Size: Makes 24 servings

    Had nearly this yesterday without realising it was a SP recipe!
    Tomato instead of bell pepper, and different seasonings. Good dark rye bread instead of crackers - or i would have used oatcakes.
    But very easy and very yummy. - 11/11/12

    Sounds good to me. I like the idea about running it through a processor to smooth it out. Regarding the 24 servings for 20 crackers-they anticipate someone it going to double dip I suppose. - 11/11/12

    Just a quick comment about the brand names used in some of the recipes. This recipe was submitted by Daisy Brand, so it makes sense they would specify their brand. Just like recipes from Pillsbury specify Pillsbury items, but of course you can substitute your favorite brand name. - 11/11/12
