Introduction

Homemade burrito bowl - I like to mix this up on a Sunday night and scoop out some for lunch each day - quick and easy! Homemade burrito bowl - I like to mix this up on a Sunday night and scoop out some for lunch each day - quick and easy!
Number of Servings: 4

Ingredients

    1 Pouch Uncle Ben's Brown Rice
    1 Can Black Beans - no salt added
    2 Four oz Chicken Breasts
    1 Link Johnsonville Chicken/Pork Italian sausage
    2 Tbs. Frontera Jabanero Salsa (any salsa will do)
    1/4 Cup Reduced Fat Shredded Mexican Cheese

Tips

I microwave portions for 2 minutes - stir well and enjoy.


Directions

Grill and cube chicken breast
Grill sausage - I use 1 link - usually a leftover
Mix with 1 small can drained black beans (no salt) and 1 Pouch Uncle Ben's brown rice. Pour 2 TBs. salsa and 1/4 cup shredded cheese over top and mix well. Refrigerate.

Serving Size: 1 Heaping cup
