Chicken with Sugar Snap Peas

    16oz fresh sugar snap peas
    6oz package Fresh Mushrooms
    (4) 4oz boneless skinless chicken breast (cooked and cut into chunks or strips)
    Sweet and sour sauce (recipe included)

    Sweet and Sour Sauce

    1/2c splenda
    1Tbsp cornstarch
    1/3c rice or white wine vinegar
    1Tbsp reduced sodium soy sauce

    combine splenda and cornstarch in med saucepan

    stir in 1/2c water, vinegar, and soy sauce, mix well.
    heat mixture over med heat until it boils, stirring constantly. Boil and stir for 1min
    batch makes 12 portions

    Sweet and Sour Sauce portion = 96 calories


Cook Chicken and season to taste, cut into cubes or strips. Set Aside

Make the Sweet and Sour Sauce. Set Aside

Cook sugar snap peas according to package instructions, Immediately rinse in cool water to stop cooking, set aside.

Cook and stir mushrooms in large sprayed skillet over medium heat for 5 to 6 min

Add peas, chicken strips, and sweet and sour sauce, stir until mixture heats through
