RAD's Minestronie Leftover Soup

Ingredients

    1/2 medium onion roughly chopped (about 3/4 cup)
    2 cloves garlic finely chopped
    1 large celery stalk sliced in 1/3 inch moons
    2 TB olive oil
    1 cup fresh green beans snapped in small pieces
    1/2 cup chopped carrots
    1 can Del Monte organic chopped tomatoes with liquid
    2 cups Winn Dixie organic vegetable broth - fatfree
    1 can Winn Dixie Organic light red kidney beans with liquid
    2 small sweet peppers deseeded and chopped
    8 oz cooked Jennie O breakfast sausage chopped (leftover)
    1 cup baby spinach
    1 cup yellow squash and onion sauted in oil (leftover)
    1 tsp oregano
    1/2 tsp ground black pepper
    2 large fresh basil leavles finely chopped
    1/2 fresh thyme finely chopped

Tips

Garnish with grated cheese and serve with green salad and bread


Directions

Saute onion, celery and garlic over med heat til tender about 6 minutes
Add rest of ingredients, stir well and simmer until rest of the vegetables are tender and flavored are mixed - about 30 minutes

Serving Size: 5 - 2 cup servings
