Ariel's Tortilla Soup

Introduction

I boiled 3 chicken breasts until done. Chopped the chicken and added back to the water. I did not change the water, but skimmed some of the solid fat away.

You can use any canned beans you like, leave out the onion/peppers, use hot Rotel tomatoes. I didn't drain the brown beans, but I did drain the black beans and corn before dumping them into the pot.

Ingredients

    3 chicken breasts (small) cooked in water to cover
    1 can of each:
    black beans, drained
    corn, drained
    pinto beans
    great northern beans
    1 small onion, chopped
    1 bell pepper, chopped
    1 can Rotel tomatoes
    spices to taste-- Goya season packet, cumin, cilantro, red pepper flakes, chili powder, cayenne pepper or anything you like

Directions

cook chicken in enough water to cover. The more water you have, the thinner your soup will be.
Once chicken is done, remove and chop.
Skim the top of the pot to remove any solids from the chicken broth.
Add the chicken back to the pot, and add all other ingredients.
Season soup to your taste with cumin, red pepper, etc.
simmer until all vegetables are tender.

Serve with crushed tortilla chips and 1 oz. shredded cheese
