Strawberry Granola Crunch

The original recipe added cranberries at the end, but it seemed weird to me. I wanted to add another cup of something though so the serving size would work out. I decided to add puffed wheat for more crunch, and it saves you a few calories.

Number of Servings: 12

Ingredients

    1 Cup cashews
    1 Cup almonds
    1 Cup Fresh Strawberries
    2 Cups old fashioned oats
    1 Tablespoon Cinnamon
    0.5 Cups Honey
    1 Tablespoon vanilla
    1 Cup Kashi 7 grain puffs (or whatever puffed wheat you prefer)

Directions

1. Preheat oven to 325įF Line a baking sheet with parchment or silpat.
2. Place the nuts into a small food processor and pulse to crumble (if you don't have a food processor, you can use a Ziploc bag and a rolling pin). Donít overdo it, you donít want them finely ground, just lightly chopped/crushed.
3. In a medium sized bowl combine the chopped nuts, oats, puffed wheat and cinnamon. Stir to combine and set aside.
4. Place the fresh strawberries, honey, and vanilla in a small food processor (or blender) and blend until pureed. Pour into oat/nut mixture. Toss/stir to combine.5Line a baking sheet with parchment paper or a silpat. Spread the granola in a single layer on top. Bake for 20-25 minutes, stirring every 5-7 minutes. Donít be concerned if the granola seems mushy. Remove from the oven and let it sit and cool for one hour.
6. Store in a Ziploc bag. Enjoy as a cereal, snack, or over ice cream.
