Super Satisfying Vegetable and Cabbage Soup

Introduction

This is great to start in a pot, move to a crock, and freeze in containers for chilly days! This is great to start in a pot, move to a crock, and freeze in containers for chilly days!
Number of Servings: 12

Ingredients

    1 cup red onion, chopped
    1 cup celery, chopped
    1 cup fresh raw carrots or baby carrots, chopped
    2 tsp olive or canola oil, or spray
    1 cup sweet peppers, washed, seeded and diced
    1 med head of cabbage, washed and chopped fine
    1 cup or 1 small red cabbage, washed and chopped fine
    1 can seasoned diced or stewed tomatoes
    3-4 cups FF Chicken broth (or low fat) or veg broth
    3-4 cups tomato or V8 juice
    4-6 cups water
    Salt and Pepper to taste, plus your own herbs



Tips

freeze a few portions in small containers and bring one out every week or 2, for a fast and filling lunch or dinner. great with rice, or add a meat and thicken to make a hearty stew.


Directions

Heat large non-stick pan or dutch oven to medium with oil or spray. Add Onion and celery and reduce to med-low for 2 min. Add carrots for 1 min, then peppers. Stir and cook until onion and celery are turning translucent, about 5 minutes. Transfer to slow cooker and add remaining ingredients, liquids last, keeping back some of the tomato soup and water to be sure there is enough room in your slow cooker for. Add salt and pepper and herbs to taste (fresh basil and rosemary are wonderful in this). Cover and bring to simmer on high, then reduce heat and simmer on low in slow cooker for at least 40 minutes, or as long as you like.
