Strawberry/Apple Salad for Life

Introduction

You need a BIG BOWL for this salad. If you are following Fuhrman's Eat to Live program, you will understand. Despite the 11 grams of fiber, it looks spectacular and you will be envied if you bring it out at lunch at work. AND it is great pulsed in processor for a micro salad. Number of Servings: 1

Ingredients

    3 cups colorful mixed greens, washed, and torn or chopped coarsely. 3 cups weighs about 3 ounces.
    1 apple grated
    1 cup sliced strawberries
    .5 oz. walnuts
    1 t. coconut oil (I prefer a coconut oil which smells like coconut for this fruity salad)
    1 T Colavita Basalmic Vinegar



    If you are brave, you can add chopped sweet onion or shallots, but they are not figured into the nutritional information.

Tips

If you do your own sprouts, mung bean sprouts are good on top of this and add another crunch alongside the walnuts. Cashews or almonds work well and are also anti-angiogenic, if you have no walnuts.


Directions

Dressing: Mix 2 T of the grated apple with coconut oil and vinegar. Microwave for 1 minute. Cool while assembling the salad.

In a large glass bowl, place greens. Top with:
strawberries
remaining grated apple
walnuts
dressing, spreading out over the entire salad.

Serving Size: Makes one large, delicious, main-dish salad for one
