Introduction

Ingredients

1 1/2 cup flour
1 cup bran flake cereal (not sugar coated)
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoon ground cinnamon
1 teaspoon ground clove
1/2 cup raisins or prunes
2 large eggs
1 6 oz low/no fat vanilla yogurt
1/3 cup oil
1 large very ripe bananas
1 teaspoon vanilla extract
Tips
Directions
Preheat oven to 400 degrees. Spray muffin tins with Pam.
Mash bananas. Mix all dry ingredients together including the raisins in a large mixing bowl.
Blend eggs, bananas and vanilla in another bowl. Then add to dry ingredients. Mix thoroughly and then fill muffin tins.
Bake 15 minutes or until browned. These freeze well.
Makes 12 muffins.
