Quick Ratatouille

Ingredients

    1 med or 1/2 large onion, chopped
    1 T. extra virgin olive oil
    2 cloves garlic
    1 med green pepper, chopped (approx 1 cup)
    1 eggplant with peel, diced
    4-5 large mushrooms, thinly sliced (approx 1.5 cups)
    2 14.5 oz cans diced tomatoes, italian style

Tips

If using plain diced tomatoes, add 2-3 t basil.
If you prefer a spicier ratatouille, sprinkle individual servings with red pepper flakes to taste.


Directions

In a 4 quart stock pot, fry onion in olive oil (add spritz of cooking spray if desired) on medium heat until softened but not browned. Add green pepper and garlic, cook 2-3 min. Add eggplant and cook until softened, about 4-5 min. Add mushrooms, cooking 3 minutes or until mushrooms are cooked. Add tomatoes. Rinse each can with 1/4 c water and pour into the vegetables. Bring to a simmer, turning to low until heated through, 10-15 minutes.
