Ingredients

    Honeyville Blanched Almond Flour, 1 cup
    Honeyville Organic Coconut Flour, 1/2 cup
    Kroger brand Fiber Powder, 12 tsp
    Baking Powder, 2 tsp
    Baking Soda, 2 tsp
    Salt, .25 tsp
    Pumpkin Pie spice, 2 tsp
    Cinnamon, ground, .5 tsp
    Nutmeg, ground, .5 tsp
    Coconut milk, 3/4 cup
    Kroger sugar free french vanilla coffee creamer, 3/4 cups
    Vanilla Extract, 2 tsp
    Da Vinci Gourmet syrup, Sugar Free, 5 tbsp
    Egg, fresh, 4 large
    Cinnamon and spice cream cheese frosting (see my other recipes/posts for this recipe)

Tips

I bake the dry and wet ingredients separately, then mix them together.


Directions

Pre-heat oven to 350 degrees
Mix all ingredients in a bowl until well blended.
Fill paper lined muffin cups about two-thirds the way up with batter.
Bake for 20-25 minutes until the tops are golden brown.
Stick with toothpicks in the center & make sure it comes out clean.
Remove muffins from oven & let cool completely before icing with the cream cheese frosting.


Serving Size: Makes 12 servings
