Number of Servings: 12

Ingredients

    1 cup whole wheat flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1 cup oats
    1/2 cup chopped prunes
    1 egg
    1/3 cup brown sugar
    1 cup applesauce (or 1 chopped/grated apple)
    1 tsp vanilla
    6 oz Low/no Fat Vanilla Yogurt

Directions

Makes 12 muffins - grease muffin tin and preheat oven to 400 degrees F.

1. In small bowl, combine flour, baking powder, baking soda and cinnamon.
2. In a larger bowl, combine egg, yogurt, applesauce, vanilla and brown sugar. Stir well .
3. Add flour mixture to liquids and stir enough to moisten; add oats, then add prunes.
4. Pour into prepared muffin tin. Bake for 20-25 minutes.
