Microwave Lemon Curd (Lemon Cheese)

Introduction

This is best kept in the refrigerator as it does nor keep as long as jams because of the lower sugar content. It can be used in any recipe that uses jam. Number of Servings: 33

Ingredients

    100ml Lemon juice
    2 Large fresh eggs
    110g Sugar
    60g Spreadable butter or Flora buttery, low salt

Tips

Lemon curd can be used on toast, in muffins or ice cream mixes, as a filling for cakes, donuts or tarts, and in Queen of puddings.
Lime juice or other citrus juices can be used instead of lemon juice.


Directions

Prepare a clean jar and lid by scalding them with boiling water then emptying them.
Beat the eggs and lemon juice together then pass through a fine sieve into a deep microwaveable bowl.
Add the sugar and stir well then add the butter in teaspoonfuls and stir again.
Cover the bowl with clingfilm and microwave at 850-900 watt for one minute. Whisk.
Remove the cover and microwave at 650 watt six times for one minute each, whisking well each time to prevent curdling.
Remove the bowl from the microwave and continue whisking until the mixture cools. The mixture will thicken as it cools.

Serving Size: makes 33 10ml servings
