Roasted Vegetables

Number of Servings: 4

Ingredients

    1 rutabaga
    1 sweet potato
    2 russet potatoes
    3 parsnips
    1 onion
    6 garlic cloves
    2 T. olive oil

Directions

Preheat oven to 400. Cut vegetables into chunks. Mix all ingredients together. Place in pan sprayed with Pam. Roast for an hour or longer until vegetables are tender.

Serving Size: Makes 4 servings for a one-course meal
