Scott Burris' Whole Wheat Bread

Introduction

Delicious, the whole family likes it, even my husband, who had never had a whole grain until we were married. Delicious, the whole family likes it, even my husband, who had never had a whole grain until we were married.
Number of Servings: 60

Ingredients

    5 cups warm water
    2 Tbsp yeast
    2 Tbsp dough enhancer
    2 Tbsp gluten
    1/3 cup oil
    1/3 cup honey
    2 Tbsp salt
    12 cups whole wheat flour, fresh ground preferred (may need more or less flour each time but the nutrition info uses 12 cups)


Tips

Put in oil first then honey to help the honey slide easily out of the measuring cup. Use oil on your kneading surface instead of flour. While kneading throw dough down hard onto counter to help eliminate air bubbles, and stress. :)


Directions

Add 4-5 cups of flour to water. Mix slightly. Add yeast, dough enhancer, gluten, oil, honey, salt. Mix slightly. While mixing, continue to add flour until dough holds together and does not stick to sides of bowl. Cover and mix on high about 7 minutes. Turn onto oiled counter and divide into 4 loaves. Knead well. Put into greased bread pans. Let rise in a 140-170 degree oven until doubled. Turn oven up to 350 degrees and bake 30-40 minutes or until golden brown on top and has a hollow sound when thumped.
