Celery chicken en papillote

Submitted by: SELCHIE9

Introduction

Chicken is wrapped in foil so it steams in its own juices on a bed of vegetables. This is a very versatile recipe: you can change the veggies, the sauce, or substitue fish for the chicken. The recipe is written for a single serving, but it's easy to scale up. Chicken is wrapped in foil so it steams in its own juices on a bed of vegetables. Ingredients

1 half chicken breast, skin and bone removed
    1/3 C onion, diced
    1/3 C celery, diced
    1 Tbsp lemon juice
    1/2 tsp olive oil
    1/2 tsp dried oregano
    1/2 tsp salt
    1 clove garlic, minced
    pinch cumin
    pinch paprika
    pinch hot pepper flakes
    2 thin slices of lemon

Directions

Place celery and onion at the center of a large piece of aluminum foil. Place the chicken breast on top. In a separate bowl, mix together all other ingredients except the lemon slice. Spoon half the sauce over the chicken, then lay the lemon slices on top of that. Pour the rest of the sauce on top of the lemon.

Fold the foil over the chicken to form a little package. Place the package(s) on a rimmed baking sheet and bake at 450 degrees for 25 minutes, or until cooked. Let rest for 5 minutes, then unfold.

This recipe hits the trifecta: easy, delicious, and healthy! I added some sliced carrots and yellow squash under the chicken and instead of cumin and paprika, I used thyme and rosemary. The herby lemony sauce gave the veg and chicken lots of fresh flavor. - 7/7/09
