Ingredients

1 half chicken breast, skin and bone removed
1/3 C onion, diced
1/3 C celery, diced
1 Tbsp lemon juice
1/2 tsp olive oil
1/2 tsp dried oregano
1/2 tsp salt
1 clove garlic, minced
pinch cumin
pinch paprika
pinch hot pepper flakes
2 thin slices of lemon
Directions
Place celery and onion at the center of a large piece of aluminum foil. Place the chicken breast on top. In a separate bowl, mix together all other ingredients except the lemon slice. Spoon half the sauce over the chicken, then lay the lemon slices on top of that. Pour the rest of the sauce on top of the lemon.
Fold the foil over the chicken to form a little package. Place the package(s) on a rimmed baking sheet and bake at 450 degrees for 25 minutes, or until cooked. Let rest for 5 minutes, then unfold.
