Turkey Picadillo

Introduction

This is a slight variation of Turkey and Mango Picadillo, a traditional Latin dish made with ground turkey instead of ground beef. I've omitted the mango, but you can add it to the recipe of you like, it would go in when you put in the salsa, but you'd need to reconfigure the calories. 1tsp of cinnamon can also be added, but I've chosen to omit that as well. Ingredients

    1 tbsp canola oil
    2 medium garlic cloves, minced
    1 tsp dried oregano
    1 tsp dried thyme
    1 cup salsa
    2 cups cooked brown rice, kept hot
    1 pound Honeysuckle White lean ground turkey (93/7)

Directions

Cook turkey in a large skillet over medium-high heat until browned, stirring occasionally, about 5 minutes; drain off any fat and return pan to heat.

Add oil to skillet and heat until sizzling. Stir in garlic, oregano, and thyme; cook, stirring, for 2 minutes. Gently stir in salsa; cover and cook until heated through, about 2 minutes more. Serve over brown rice.

Serving Size: Makes 4 servings, 3/4 cup stew and 1/2 cup of rice each.
