Spinach Tarts* and Chicken Salad with Creamy Garlic Dressing/Lunch or Dinner, Low Carb

Ingredients

    2 Spinach Tarts* Base Recipe (make ahead)

    For the Salad Dressing
    1/2 c cottage cheese, non fat
    2 tbsp cider vinegar
    1 tsp dry mustard powder
    1 tsp garlic puree* or 2 cloves garlic, grated
    1 lemon wedge, juice
    1/4 c chicken broth* or more to thin

    For the salad
    1 c romaine lettuce, shredded
    1 tomato, small, sliced
    .5 c carrot, shredded
    .5 c sweet red pepper, chopped
    3 oz chicken breast, poached, shredded or chopped
    2 tbsp chives, chopped

Directions

Take 2 pre-cooked Spinach Tarts* from the refrigerator and let come to room temperature (about 10 minutes). Or, make the Spinach Tarts fresh, following the Base Recipe, which will take about 10 minutes for preparation and 20 minutes at 375 degrees F to bake.

For the salad dressing

Place all the ingredients except the chicken broth in an immersion blender container (or blender jar) and puree. If desired, thin with as much chicken broth as desired.

For the salad

Shred or tear lettuce, grate the carrot, & slice the pepper then add the salad dressing and mix well. Slice the tomato and layer, with the chicken, over the salad.

To serve, plate the chicken salad, then add 2 spinach tarts. Sprinkle the tarts with a little sea salt if desired.
