Red Bean salad

Number of Servings: 6

Ingredients

    2 cups, cooked, Red beans
    4 large egg whites
    .25 cup chopped green onions
    .5 cup chopped celery
    .5 cup Balsamic vinegar

Directions

Pre-soak beans overnight and change out water 2-3 times. Cook beans in pressure cooker 25 minutes. Let beans cool. Boil eggs 5 minutes and let stand 5 minutes in the hot water. Let eggs cool. Peel eggs and separate out yolks. Chop the egg whites, onions, and celery. Add all ingredients in a bowl and pour in vinegar and stir ingredients together.
