IntroductionMakes two 8" or 9" crusts. This is delicious with apple pie, or as a savoury base for pot pies like chicken. Makes two 8" or 9" crusts. This is delicious with apple pie, or as a savoury base for pot pies like chicken.
1 3/4 cups peeled, cubed sweet potato (about 1 large)
1 1/2 tbsp melted coconut oil
1/4 tsp salt
1 1/4 cups spelt flour
1 tsp baking powder
Spread sweet potatoes in a single layer and roast until starting to brown, about 25-30 minutes, stirring every 10 minutes. Cool completely, then mash.
Mix in the coconut oil and salt.
Add the flour and baking powder and mix well.
Divide in half, wrap each half in cling wrap and refrigerate 1 hour before use.
Serving Size: Makes two 8" or 9" crusts
