Lentils Rice & Beans

Number of Servings: 20


    1 lb Long Grain Brown Rice
    0.5 Cup Light Red Kidney Beans
    0.5 Cup Black Beans
    1.75 Cups Lentils
    14.5 oz Fire Roasted Tomatoes
    14.5 oz Sliced Stewed Tomatoes
    10 oz Diced Tomato with Green Chilies
    3 tsp Garlic Salt
    1 TBSP Chili Powder
    2 TBSP Paprika
    5 TBSP diced Jalapeno


First cook beans according to package instructions (I use quick method which means add water, bring to boil, then turn off heat and let set for one hour. Drain, rinse, add more water, bring back to boil, then reduce heat and simmer on medium heat for an hour.)
In separate pot, cook brown rice according to package instructions. (Takes approximately 40 minutes.)
When rice is cooked, add the three cans of tomatoes and stir. Then add beans to the rice and stir it all together. Add in jalapeno's and spices and stir.

Serving Size: Makes app. Twenty 1/2-Cup Servings
