Triscus Cinnamon rolls

Ingredients

    Rolls
    4 1/2 c whole wheat flour or mix 1/2 all purpose
    1 c warmed milk
    2 room temperature eggs medium
    1/3 c butter melted
    1 tsp salt
    1/4 oz yeast
    Filling
    1 c packed brown sugar
    2 1/2 tsp cinnamon ground
    1/4 butter softened
    On dough
    1/4 butter smeared over dough
    Spread/Topping
    8 oz softened cream cheese or neuftachel
    1/2 butter softened
    2 c powdered sugar
    1/2 tsp lemon juice
    1/4 almond extract
    1/4 vanilla extract

Tips

You can omit the almond and use all vanilla or vice versatile if desired. Don't omit the lemon though - its a classic! Enjoy!


Directions

Prepare in bread machine on dough cycle or in mixer with dough hooks.
Warm milk to 115 f add yeast until bubbly. Add butter to yeast mix. Add beaten eggs to mixture. Add flour 1 cup at a time and mix until dough is pliant.
Cover dough with damp cloth in warm area to rise.
While rising 45 min or so - combine brown sugar cinnamon and 1/4 cup butter. Cut in until it forms pea size clumps.
Once dough has doubled or the dough cycle is done punch down and roll out to 24"x 16" rectangle.
Spread 1/4 cup butter over dough. Spread the sugar cinnamon filling over buttured dough.
Start rolling dough tightly the length of the roll. Tuck each turn and pinch the end tuck into the dough to seal.
Push ends into roll on either side to avoid throwaway.
Make 1-2" slices until you've cut 12-18 rolls.
place rolls in a greased 11" x 16" baking dish. Cover with aluminum foil and allow to rise for 45-60 minutes or until doubled in size.
Bake at 350 for 20 minutes.
While baking cream butter and cream cheese. Add powdered sugar 1 cup at a time. Add lemon juice almond extract and vanilla extract. Mix and wipe down bowl as needed until the frosting is creamy and lump free.
Allow rolls to cool 2-5 minutes and then frost all the rolls while warm. Refrigerate after cooled.store loosely covered in fridge up to 3 days. Warm 10-15 seconds if desired.
