1 1/2 cups thinly sliced zucchini 1 1/2 cups thinly sliced summer squash 1/2 cup part skim ricotta cheese 1 cup alfredo sauce 1/4 cup mozzarella cheese
Preheat oven to 350. Spray a 8x8 pan with cooking spray and layer zucchini and squash in a single layer. Mix ricotta and alfredo together and spread a thin layer over squash. Repeat another layer of squash and sauce and sprinkle some mozzarella cheese over the top. Bake at 350 for 30 minutes or until bubbly and cheese is melted.
