Stove Top Mexican Quiche

Introduction

I used to love frozen Mexican Quiche. Using a bell pepper ring for the sides and crushed crackers for the base means I don't have to go without the crust. I used to love frozen Mexican Quiche. Number of Servings: 2

Ingredients

    1 large Green Bell Pepper
    1 large egg
    2 egg whites
    1 oz shredded sharp cheddar cheese
    1 medium pickled or fresh jalapeno, diced
    pinch of chili powder
    4 whole wheat crackers, finely crushed
    Olive oil mist


Tips

If using fresh jalapeno, you might want to add a dash of salt, but not too much. The cheese will also add salt to the dish.


Directions

Slice the top and bottom off of the bell pepper. Cut pepper into two pieces to make two large rings. (These will be the sides of your quiche.) Mix the egg, egg whites, jalapeno, chili powder, and sharp cheddar cheese together. Set aside. Heat a large pan over medium-low to low heat. Place the bell pepper rings in the pan. Spray olive oil inside the rings to coat the pan. Sprinkle the crushed cracker crumbs to the inside of the rings in an even coating. Fill each ring with egg mixture. Cover and cook for ten to fifteen minutes. Remove from pan and cool slightly.
