Low calorie mini cheesecakes

Low calorie mini cheesecakes

Introduction

Delicious mini cheesecakes. Delicious mini cheesecakes.
Number of Servings: 12

Ingredients

    Crust:
    .5 c graham cracker crumbs
    2 tbsp sugar
    2 tbsp margarine (melted)

    Filling:
    2 packages (8 oz each) fat free cream cheese
    22 packets of splenda no calorie sweetener
    2 eggs
    1 tsp vanilla

Directions

Preheat oven to 350 degrees. Line cupcake pan with foil cupcake tins.

Mix crust ingredients and press into the bottom of the cupcake tins.

Mix the filling ingredients until smooth. Evenly distribute among the cupcakes. Bake for about 15 minutes.

Makes 12 mini cheesecakes. I topped some with sugar free strawberry topping, some with sugar free caramel topping, and some with sugar free chocolate syrup. These calories are not included in the count for this recipe.
