Turkey-Stuffed Peppers

Introduction

Red, Green or Yellow bell peppers stuffed with rice, veggies and ground turkey!! A whole meal stuffed inside a fresh sweet pepper!!! Red, Green or Yellow bell peppers stuffed with rice, veggies and ground turkey!! A whole meal stuffed inside a fresh sweet pepper!!!
Number of Servings: 6

Ingredients

    1 cup onions, chopped
    1 cup celery, chopped
    450 grams ground turkey
    5 cloves of garlic, finely chopped
    1/8 cup roasted red peppers, finely chopped
    1/4 cup scallions, finely chopped
    5 large bell peppers
    1 tbsp Extra Virgin Olive Oil
    1/2 cup chicken broth
    1/4 cup white wine
    1 tbsp Worcestershire sauce
    1 tbsp Red Miso paste
    2 cups par-cooked brown rice (al dente)

Tips

You can season the dish anyway you like. The Miso, worcestershire sauce and white wine are completely optional.


Directions

Preheat oven to 350 degrees.

Cut the tops off of the bell peppers and remove the ribs and seeds. Keep the tops for baking. Place on a foil wrapped baking sheet.

In a skillet over medium high heat, suate onions, celery and garlic with olive oil until onions become tanslucent. Add ground turkey and continue to cook until completely browned. Add scallions and roasted red peppers and mix thoroughly. Deglaze the skillet with the white wine then add the rice, the chicken broth, miso and the worcestershire sauce. Mix well. Cover and let cook for 10-15 minutes or until the rice is completely cooked.

Spoon the mixture evenly into the peppers and put the tops on to cover them. Place them in the oven for approx. 45 minutes. For a crispy top you can remove the pepper tops for the last 15 minutes of cooking time. You can also add cheese and/or bread crumbs for a crispy top, but this will change the nutritional info.

Serving Size: 5 very large stuffed peppers
