Tomato coleslaw for the HCG diet

Introduction

This is great served with broiled or grilled Tilapia or other white fish. This is great served with broiled or grilled Tilapia or other white fish.
Number of Servings: 2

Ingredients

    2 cups sliced or chopped cabbage
    1 small tomato cut wedges and then sliced crosswise into thin slices
    2 tablespoons thinly sliced onion
    2 tablespoons apple cider vinegar
    1 teaspoon Dijon mustard
    a few drops of liquid stevia (optional)
    salt and pepper to taste

Directions

Mix together the cabbage, onion, and tomato. In a small bowl or custard cup mix together the mustard and vinegar. Add a few (3-4) drops of stevia if you wish. Pour over the salad, sprinkle with salt and pepper and mix well.

Serving Size: Makes 2 servings of a little more than a cup each.
