HCG Chicken Stew, Italian style

Introduction

Number of Servings: 4

Ingredients

    1 14.5 oz. can diced tomatoes
    1 pound skinless boneless chicken breast, cut in chunks
    1/2 cup diced green pepper
    2 cloves garlic, minced
    1 cup sliced onion (cut in strips)
    1 cup sliced celery
    1/2 teaspoon dried basil
    1/2 teaspoon dried oregano
    1/2 teaspoon dried poultry seasoning
    1 teaspoon broth flavoring or bouillon (enough to flavor 1 cup of liquid)
    2 cups zucchini
    (freshly ground black pepper to taste)


Directions

Put the canned tomatoes in a good sized pot and start to heat on the stove. Add the chicken breast and let it start to simmer while you cut up the rest of the veggies (except the zucchini). Add the veggies as you cut them up. Then stir in the herbs and broth flavoring. When the chicken and veggies are pretty much done stir in the zucchini and cook briefly until zucchini is as soft as you like. Grind in some black pepper if you like.

Serving Size: Makes 4 servings, about 1-1/2 cup each
