Slow Cooker Salsa Chicken

Ingredients

    1.5lb boneless, skinless chicken breasts
    1 cup salsa
    1 package taco seasoning
    1 can cream of chicken soup (condensed)
    1/2 cup sour cream

Directions

Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.
Serve with rice.
NOTES:
You may use half the packet of taco seasoning
Some slow cookers cook faster than others. The newer ones cook a bit faster and you may have to adjust your cooking time based on that!

    Great meal. No prep time. I added brown rice to the slow cooker with 20 min left. It turned out wonderful. Didn't use the sour cream, and used chicken stock instead of soup...less salt! - 8/22/09

    My husband raved about this and was shocked when he found out it was good for him :) I added black beans, shredded the chicken before serving it over brown rice w/ some lowfat cheese on top. Delicious and filling! I will make this again and try some of the variations mentioned. - 2/12/10

    I used 98% fat free cream of chicken soup and light sour cream. Served it on brown rice and had vegetables on the side. It was like a comfort food meal with a Mexican twist. - 9/20/08

    This is a great recipe! Everyone in the family enjoyed it. I cut the chicken into strips before cooking because I knew we were having it as fajitas. I used no fat Greek yogurt, 98% fat free mushroom soup (that's what was in the pantry), and low sodium taco mix. We will definitely make this again. - 2/20/10

    I make this with nothing but the salsa, and add a teaspoon of grainy mustard and a teaspoon of brown sugar (I use the equivalent in the artificial brown sugar). My husband is picky and he says he could drink the sauce! WE love it! - 2/16/10

    This was AWESOME! I only used 1/2 a packet of taco seasoning & was still able to season both sides of the chicken breasts (3 total). I also used an entire large jar of salsa & kept it in the slow cooker for 10 hours & the chicken was perfect! It served 3 (we each had 1 chicken breast) perfectly. - 1/28/10

    The sauce was excellent but the chicken was bland. I will cut the chicken into smaller pieces next time to see if it will absorb some of the flavor - 12/8/09

    This recipe was super yummy! I tried to get every low-sodium option I could but it was still a bit spicy -- next time I'll make homemade seasoning. I followed advice and added some rice for the last 30 min -- it needed a bit longer to not be crunchy. It's good though! I'd experiment with it again! - 7/22/10

    An E for Excellent! There is virtually no prep time with this recipe and it tastes great. I'm surprised how well the ingredients married up. I made rice and after tasting it, I would also add some refried beans for a perfect dinner. - 3/19/09

    Very tasty dish! I shredded the chicken & used a packet of Enchilada Sauce Mix instead of the Taco Seasoning because its what I had on hand. Adjusted the flavor using Chili Powder & Cayenne. Enjoyed this over a bed of brown rice! Can't wait for leftovers tomorrow! - 2/8/09

    This was so good! I sprinkled enough taco seasoning to cover both sides of the chicken. I didn't have cream of chicken but used cream of mushroom instead and threw in some left over peppers and jalapenos. I ate over brown rice with a sprinkle of mexican cheese. Will DEFINITELY make again. - 2/3/09

  • Butterflied chicken breasts and rubbed spices in, then followed recipe. Our crock pot had this done on low in 4 hours. The chicken was fall apart tender and creamy! Even our 7 year old daughter loved it - she's not a meat lover. Served it with rice and steamed broccoli - extra sauce great on veggies - 1/12/14

  • I used 1/2 packet of the taco seasoning and could barely taste it, next time I will use the whole packet. I cooked on high for 1 hour then low for 4 hours. The chicken was tender and yummy. Leftovers go great in a tortilla or on top of chips for nachos! - 11/2/10
