Curried Cream of Cauliflower Soup

    Cauliflower, raw, 1 head, large in pieces
    Chicken Broth 99% Fat Free, 4 cups
    Onions, raw, 2 cup, chopped
    Olive Oil, 2 tbsp
    *Christopher Ranch chopped garlic, 4 TB
    Curry powder, 3 tbsp
    Nutmeg, ground, 1 tsp
    *Pumpkin Pie spice, 1 tsp
    *Pepper, white, 1 tsp
    Ginger, ground, 1.5 tsp
    Half and Half Cream, .5 cup
    0% Greek Style Nonfat Yogurt, Plain, Trader Joe's, 1 cup
    Milk, 1%, 1 cup
    salt to taste


1. Chop onions, saute with garlic in oil until soft.
2. Add cauliflower pieces, chicken broth and spices. Bring to boil, then turn down heat and simmer until vegetables are soft, about 20-25 minutes.
3. Puree vegetables and broth in a blender, food processor or with hand impersion blender until smooth. Return to soup pot, add yogurt, milk and half & half, stirring well to blend.
Adjust seasonings to taste. Reheat and serve.
