Maple-Dijon Chicken

Number of Servings: 6

Ingredients

    6 chicken breast halves (2 oz each)
    1/2 cup Dijon mustard
    1/4 cup maple syrup
    1 tablespoon rice vinegar
    fresh rosemary
    salt and pepper

Tips

I use an electronic thermometer from Walmart that you can stick in one of the pieces and leave in there while it's cooking and it will beep when it reaches temperature.

I like to have this with a serving of rice and broccoli.

Directions

Mix mustard, maple syrup, and rice vinegar with a whisk. Pour a little of the sauce mixture in the bottom of a baking pan, just to coat the bottom.

Salt and pepper your chicken breast halves and place them in the pan, evenly spaced. Pour remaining sauce mixture gently over them.

Cook for 30-40 minutes, or until a meat thermometer reads 165F. Serve with fresh, chopped rosemary on top.
