This is a satisfyingly sweet and delicious treat that fills the whole house with the smell of baked cinnamon and apples.It makes a good breakfast or healthy dessert. If you have leftover rice from dinner, this can be mixed up and baked the night before to be ready for a quick-warm-up breakfast. Ingredients
1/2 cup liquid Egg substitute,
1 cup White Rice, long grain, cooked
3 tsp Splenda
1 Tbsp ground Cinnamon,
2 tsp Brown Sugar, packed,
2/3 cup Sweetened Dried Cranberries, (2 servings)
1/3 cup Raisins, packed
1 medium fresh Apple, (2-3/4" dia/approx 3 per lb), 6 thin slices with remainder diced
1 Tbsp sliced Almonds
Tips
I like it best warm with 1/2 cup of milk poured over the top.
Directions
Preheat oven to 350 degrees.
In a small oven-safe baking dish mix all ingredients EXCEPT FOR the 6 thin slices of apple and sliced almonds.
Stir well, breaking up cranberry, raisin and rice clumps as well as possible.
Sprinkle almonds on top and lay apple slices in a pinwheel pattern.
Bake until firm, about 40 minutes.
