Breakfast In The Raw (pg.60)

Number of Servings: 2

Ingredients

    1 TBS. coconut oil
    2 cups fresh spinach
    7 oz. Atlantic Salmon, raw or poached
    1 mango, diced

Directions

Warm coconut oil over low flame until liquid.
Combine with spinach and toss well.
Place spinach on plates. Then put fish on spinach topped with mango.

Serving Size: Makes two servings.
