Lentil Tomato Sauce

Introduction

The lentils give an almost meaty flavor and texture. Best with all fresh vegetables. We serve over whole wheat pasta. The lentils give an almost meaty flavor and texture. Best with all fresh vegetables. We serve over whole wheat pasta.

Ingredients

    Lentils
    Diced tomatoes
    Oregano
    Basil

Directions

Cook the lentils separately until almost cooked through. In a large skillet, saute vegetables. In a saucepan, slowly heat tomatoes and spices. Add the cooked lentils to the sauteed vegetables. Cook five minutes. Add to tomatoes. Simmer gently while cooking the pasta. Spoon over pasta and serve.
