1-1/2 Cups natural bran
1 Cup all purpose flour
1/2 Cup packed brown sugar
1-1/2 Tsp baking powder
1 Tsp ground cinnamon
1/2 Tsp baking soda
1/4 Tsp ground nutmeg
Pinch salt (optional)
2 Large eggs
1 Cup unsweetened applesauce (1 large tart (Spartan) apple washed remove seads, chop - cook in microwave for 3 minutes - let cool before using - note do not peal).
1/2 Cup Plain - low / 0 fat yogurt
1/2 Cup butter melted or vegetable oil
1-1/2 Cups fresh / frozen blueberries - no need to thaw
Total Calories - 2421
If you make smaller portions divide # into total to get individual serving size.
Prepare 12 cup muffin pan - lined with paper liners
Whisk together dry ingredients in one bowl
In another bowl beat together liquid ingredients
Make well in dry ingredients and add liquid ingredients
Stir until just combined
Gently stir in blueberries.
Spoon into muffin pan.
Bake for 15 - 18 minutes or until a tester inserted in the centre of muffin comes out clean.
