2 large eggs 1 oz cream cheese splash of lemon juice 1/4 tsp vanilla extract Packet of Splenda Tblsp of sugar free preserves
Soften creamcheese for seconds in microwave. Whip in 2 eggs, add vanilla, lemon juice and splenda. Microwave until egg mixture poofs up, maybe 1.5 minutes at medium, longer at low. Add tblsp of sugar free apricot preserves as topping. Serves 1.
