Anytime Tart Carrot Salad

Introduction

Healthy, low calorie, no-mayo carrot salad. Good for breakfast or as a snack or side item at lunch or dinner. Healthy, low calorie, no-mayo carrot salad. Good for breakfast or as a snack or side item at lunch or dinner.
Number of Servings: 6

Ingredients

    Fresh Carrots, raw, 2 cups
    Pear, 1 medium pear, cut into small cubes
    Lime Juice, 3 tbsp
    Ground Ginger, 1 tsp
    Apple Cider Vinegar or Rice Vinegar, 2 tbsp
    Raisins, 1/2 cup
    Splenda, 1/2 tsp

Tips

Garnish with fresh mint leaves. (OPTIONAL)


Directions

1. Cut pears into small cubes and place in a bowl of cold water. Let sit for about 5 minutes.

2. Clean and grate carrots

3. Drain water from pears and add combine all ingredients.


Serving Size: Serves about 6
