Sweet Potato Turkey Fritatta

Introduction

I had picked up some turkey sausage and needed to cook it, this is what I threw together. Measurements may not be exact only because I cook with what I have on hand. Number of Servings: 8

Ingredients

    2 Sweet Potatoes-Peeled and grated
    1lb. of Jennie O Turkey Sausage (tube)
    Raw White Onion-Sliced and Diced
    6 Large Eggs
    1 small container of Eggbeaters Egg Whites
    1 TBSP of Salt
    1 TBSP OF Black Pepper
    Eyeball some Garlic powder
    Pinch of Cayenne Pepper
    .50 cup of Milk (your choice, I used Skim)
    4 TBSP EVOO
    ***Smelly cheese if you would like, it will play of the sweet potatoes better than a cheddar.
    I had a a less than a half a cup of the Toscano Cheese left, so I grated it and threw it in.


Tips

This is an easy recipe, you can add stuff or take it away according to what you are looking for in your diet. I tasted everything while cooking to see if I needed to add anything to it, I'm a big believer in spices. It just sounded really good to me and even my mother (who puts ketchup on her eggs) loved it (without ketchup). I made it for dinner and then had a piece for breakfast, I am a fan of brinner.


Directions

Get out 2 skillets, one larger than the other. Put 2 TBSP of EVOO in each and put them on medium heat.
Place the sliced and diced Onion in the smaller of the two skillets to start browning.
(This is when I started peeling and grating my sweet potatoes)
Put the sweet potatoes in the larger skillet and toss them in EVOO to coat.
Add salt, pepper, garlic powder, and cayenne pepper to the SP's and cook them until crispy (like a hash)
Add the turkey sausage to the onions and cook until brown.
Mix your eggs, egg whites and .50 cup of milk in a bowl (you can always do this whenever you want, these are not exact steps)
Flatten the SP's into the larger skillet, add the Turkey Sausage and Onion mixture on top.
Add Smelly cheese if you would like.
Lastly, pour the Egg/Milk mixture on top.
Bake in the oven at 350 degrees for 15 minutes.

Serving Size: Made 8 pie pieces in my skillet
