90 Calorie Pancakes

    3 C Skim Milk
    3 Tbls Vinegar
    3.5 C Flour
    4 tsp Baking Powder
    1 tsp Baking Soda
    .5 tsp Salt
    2 Tbls Soy Flour (mixed with 2 Tbls water)
    2 Tbls Oil
    .25 C Applesauce


When you pour the batter into the skillet, feel free to add chocolate chips, craisins, fruit, or other foods before flipping it. YUMMY! I love this recipe because using applesauce for some of the oil eliminates the need for granulated sugar, and the soy flour + water substitutes for eggs.


Combine milk and vinegar; let sit for 5 minutes. Meanwhile, combine flour through salt in a large bowl. After the milk and vinegar sit, combine them in a bowl with the soy flour, water, oil, and applesauce. Stir into dry ingredients, and mix until moistened; the batter should be lumpy. Pour batter onto a heated skillet or grill .25 cups at a time. Flip after 2-3 minutes, or once the edges start to set.

Serving Size: 22 standard pancakes
