Ingredients

    1 can Green Giant White Shoepeg Corn
    half bunch green onions, chopped
    1 can Beans, black,
    1 large Ripe Tomato, seeded and chopped
    2 Avacados, diced
    *dressing*
    1/4 cup Olive Oil,
    1/4 cup red wine Vinegar
    3/4 tsp Salt (optional)
    1/2 tsp Pepper, black,
    1 tsp Cumin
    2 Garlic cloves, pressed

Tips

recipe makes more as a salsa, and is also killer lo cal filling for corn tortillas.


Directions

Mix dressing and set aside, drain corn and rinse beans, mix all veggies except avacado. mix dressing and veggies, then gently mix in avacado.

Serving Size: for side dish, makes 6 servings
