Pam's Carrot Cake No Icing

Number of Servings: 16

Ingredients

    1 c sugar
    3/4 c olive oil
    2 eggs
    2 c whole wheat flour
    3/4 t ground cinnamon
    1 t baking soda
    1 t vanilla
    1/2 t salt
    1/8 t nutmeg
    3 c shredded carrots
    1 c chopped walnuts

Tips

Chopped apples can be substituted for carrots.


Directions

Bake at 350* for 35-45 minutes or until toothpick comes out clean. Grease and flour 13x9 inch pan.

Mix sugar, oil and eggs until blended. Beat 1 minute. Stir in remaining ingredients except carrots and nuts. Beat 1 minute. Stir in carrots and nuts. Pour into pan.

When baked cool on wire rack.

Serving Size: Cut in 16 pieces
