Wheat Free Waffles

Ingredients

    4 extra lg. eggs
    1/2 c. Ricotta cheese
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    1tsp. Baking powder
    1 t. Splenda
    1/2 tsp. vanilla extract

Tips

Left overs can be put in plastic Baggie in frig and heated up in toaster


Directions

Mix all ingredients in bowl with electric mixer
Spray waffle iron and preheat
Pour 1/3 to 1/2 cup batter in hot waffle iron
Cook for 3 minutes
