Chicken Roulade with Mozzarella and Bacon

I love making this dish. It's so fun and you can change the cheese and dressing as desired. I've made it with a feta-style goat cheese with gluten free honey dijon mustard. Ingredients

3 Chicken Breasts ((or thighs, just thick pieces of chicken))
Brianna's Chipotle Cheddar Dressing ((or whatever dressing you want to make it in, gluten free Honey Dijon is also amazing))
6 pieces of Bacon
Fresh Mozzarella ((or whatever cheese you want, I've used feta-style goat cheese before and it was amazing))
Salt
Pepper
Tips
This is really a wonderful recipe that's easy to make and delicious. It's also very customizable. I've made it a ton of different ways with the same steps using different cheeses and sauces. Also, it goes great with mashed cauliflower.
Directions
Slice each chicken breast in half.
Place 2 pieces of folded bacon on one side of the halved chicken.
Place sliced mozzarella on top of the bacon.
"Close" the chicken--fold the piece of chicken without bacon and cheese on it on top of the piece that does have it.
Salt and Pepper chicken.
Lightly cover each breast in the Chipotle Cheddar dressing.
Cook until chicken is thoroughly done (usually 20 to 30 minutes on 350 heat).
Serving Size: 3 (if you each eat one piece of chicken only)
