5-Minute Raspberry Almond Parfait

Introduction

From "The World's Healthiest Foods" Page 351. I changed out 2 T. honey with 3 packets of stevia. From "The World's Healthiest Foods" Page 351. I changed out 2 T. honey with 3 packets of stevia.
Number of Servings: 2

Ingredients

    8 oz (1 cup) low-fat yogurt
    1/2 t. almond extract
    3 packets stevia (3 teaspoons)
    1 cup raspberries (fresh or frozen)
    1 T. almonds (crushed, sliced or slivered)
    1 T. dark chcolate, grated (optional)

Tips

I used Endangered Species Dark Choclate (88%) in individual wrappers. Pound into pieces while still in the package.
I also used whole, raw almonds, and pounded them into pieces between 2 pieces of waxed paper.


Directions

1. If raspberries are frozen, allow them to thaw at room temperature for 30-60 minutes.
2. Blend yogurt, extract & stevia until well blended.
3. Spread yogurt mixture into the bottom of each serving bowl.
4. Layer raspberries, almonds and chocolate on top.

Serving Size: Makes 2 good sized servings
