Introduction

I love love love this soup!
I love love love this soup!

Number of Servings: 8

Ingredients

    1 Onion, Medium, chopped
    1 T. olive oil
    1 Burrternut squash, peeled and cubed *
    4 c. Chicken Stock
    2 c. water
    Salt and Pepper to taste

    * Skin is thin enough to use a vegetable peeler.

Tips

Easy to make!
Low calorie and low fat, freezes well.


Directions

Saute onion until carmelized.
Add squash, chicken stock and water.
Bring to a boil and then turn down to a simmer.
Simmer until squash is fork tender.
Puree in blender, in batches, until smooth.
Add salt and pepper.
