Ingredients

    500 grams of gigantes (or great northern beans-- or any large white bean)-- soaked overnight
    3 Tbsp olive oil
    2 medium onions, diced
    3-4 cloves garlic, minced
    1.5 Tbsp molasses
    2 Tbsp brown sugar
    1/4 cup ouzo
    1/4 cup red wine vinegar
    1 can tomatoes in juice
    1 Tbsp Oregano
    1 tsp crushed red pepper

Tips

If you have picky eaters with American tastes, you may want to puree the onions and tomatoes/flavor before adding the beans.

Use veg broth instead of chicken for a vegetarian/vegan recipe.

Make ahead and reheat or eat cold on salads or toast. Reheat with a little extra broth if necessary.


Directions

After beans soak overnight...
Add chopped onion and garlic to olive oil-- saute until golden. Add brown sugar, oregano, crushed red pepper, molasses and stir for about a minute to develop flavors. Add ouzo and vinegar to deglaze. Add beans, tomatoes, and broth (enough to cover... add more if beans become dry later).

Bring to boil, reduce to simmer and cook for 2-3 hours, or until beans are tender. Stir periodically, adding broth if necessary. If too wet at the end, uncover and let the liquid thicken.

Ideally, finish with dill, salt, and freshly ground pepper.
