Sweet Potato Salad

Ingredients

4 sweet potatoes, peeled and cubed
Onions, cubed, raw, 1 medium (2-1/2" dia)
Olive Oil, 4 tbsp
2 Jalapeno Peppers, chopped,
Garlic, 1 clove
Lime Juice, 2 lime yields
Beans, black, drained and rinsed, 2 cup
*Peppers, sweet, red, fresh, chopped 1 medium (approx 2-3/4" long, 2-1/2"
Salt, 1 tsp
Pepper, black, 1 dash
Cilantro, raw, 8 tbsp
Tips
I substitute no-salt for salt and omitted the cilantro.
Directions
Preheat oven to 400 degrees. Coat a baking sheet with non-stick spray. Place sweet potatoes and onions on baking sheet and drizzle with olive oil. Bake, turning occasionally until edges brown, about 30 to 40 minutes.
Place jalapenos, garlic and lime juice in a blender or food processor and process until blended.
Toss warm sweet potatoes and onions, beans and bell pepper in a large bowl. Add jalapeno mixture, salt and pepper. Toss well and top with cilantro.
Serving Size: makes 6 1/2 cup servings
