4 sweet potatoes, peeled and cubed
Onions, cubed, raw, 1 medium (2-1/2" dia)
Olive Oil, 4 tbsp
2 Jalapeno Peppers, chopped,
Garlic, 1 clove
Lime Juice, 2 lime yields
Beans, black, drained and rinsed, 2 cup
*Peppers, sweet, red, fresh, chopped 1 medium (approx 2-3/4" long, 2-1/2"
Salt, 1 tsp
Pepper, black, 1 dash
Cilantro, raw, 8 tbsp
I substitute no-salt for salt and omitted the cilantro.
Place jalapenos, garlic and lime juice in a blender or food processor and process until blended.
Toss warm sweet potatoes and onions, beans and bell pepper in a large bowl. Add jalapeno mixture, salt and pepper. Toss well and top with cilantro.
Serving Size: makes 6 1/2 cup servings
