Mama Hanna's Cabbage Rolls
Submitted by: HANNAZEEIntroduction
It's a more sweet and sour recipe with little surprise burst of raisins that plump in the sauce as it cooks. You can bake them, but I like the stove-top method here. Not a big fan of raisins? You can leave them out, or substitute with another fruit, like apple or pear. It's a more sweet and sour recipe with little surprise burst of raisins that plump in the sauce as it cooks. Ingredients
-
12 large cabbage leaves
water for blanching
16 oz. tomato sauce
1 tablespoon molasses
2 tablespoons sugar alternative (optional)
the juice of 1 lemon
2 tablespoons prepared barbecue sauce
1 tablespoon honey
1 tablespoon Dijon mustard
1 pound ground turkey
2 cups prepared brown rice
1/3 cup raisins
1/2 teaspoon salt
1/4 teaspoon black pepper
Tips
If you are worried about the rolls falling apart, you can use a toothpick to secure the seams and remove them after cooking.
Directions
In a large pan, boil two and a half quarts of water. Submerge cabbage leaves and blanch for one or two minutes. Remove, drain and cool.
Mix the tomato sauce, molasses, sugar alternative, lemon juice, barbecue sauce, honey, and Dijon in a large pan. Add a cup of water and heat to a boil. Stir and remove from heat. Mix the turkey, brown rice, raisins, salt, and pepper in a bowl to combine. Reserve 1 cup of the sauce for topping and add another 1/8 cup of the sauce and stir into the meat mixture. Divide meat mixture into twelve balls. Place a ball at the bottom of the cabbage leaf near the stem. Roll the bottom, sides and roll up the length of the leaf. Place roll in the pan of sauce seam side down and repeat with remaining leaves. Coat rolls with reserved sauce. Cover and cook for five minutes over medium heat. Reduce the heat to low and finish cooking for fifty minutes.
