Easy,tasty and nutritional soup with low calorie Easy,tasty and nutritional soup with low calorie
Number of Servings: 5


    A glass of red lentils(130-150 grams)
    1-2 carrots
    Onion(one large or two small)
    Medium potato(about 150 grams)
    Garlic(2 cloves)
    1 tbsp Olive oil(Not a must)
    Seasoning as desired(black pepper,red pepper,mint etc)


Wash the lentils with cold water.
Dice the onion into 4-5 pieces.
Slice the carrot into thin pieces.
Mash the garlic.
Skin the potato and cut into several pieces.
Put all of the ingredients into a dutch oven or soup pot.
Add olive oil if desired.Put salt and seasoning.Add water(up to 3-4 inches high from the top of the mixture)It depends on how thick you want your soup to be.
Start cooking.Do not close the lid,the lentils are highly likely to boil over.
when it starts to boil,turn down the heat.
Cook until all the ingredients are completely soft and ready to be easily mashed(check the carrots first).
Turn off the heat and wait it to cool a little.Then add the mixture to a blender to blend all the ingredients.You can also manually mash the mixture using a filter.Blend until all of the mixture turns into fluid.You can add a little boiled water if there is a left over in the filter,than continue to smash.
Heat the soup for several minutes and it is ready to serve.
