Pumpkin Chocolate Chip Muffins

Introduction

These are delicious and my kids can't get enough! I feel better giving them this than granola bars. These are delicious and my kids can't get enough! I feel better giving them this than granola bars.
Number of Servings: 36

Ingredients

    1/2 c. applesauce
    2 T. oil
    1 c. sugar or sweetener
    1 can pumpkin (plain)
    1 c. milk
    2 tsp. vanilla
    1 tsp. salt
    4 cups whole-wheat flour
    3 tsp. baking powder
    1 tsp. baking soda
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    3/4 cup mini chocolate chips



Directions

Preheat oven to 350. Put liners in muffin cups or spray pan. Mix all the wet ingredients until creamy. Add the dry ingredients and put into muffins or loaf pans Bake muffins 20 minutes, small loaves 30 minutes, and large loaves 50-60 minutes.

P.S. Sometimes I pour a little egg beater in there, sometimes I leave it out since I modified this from a vegan cookbook.

Serving Size: If I use the muffin scoop from pampered chef, I can get 36 muffins. If you fill the cups more, it makes 24. You can also make 3 small loafs of bread (not mini-size) or 2 large.
